1. Chicken broth simmered for 12 hours, extracting full of collagen.
2. We use ‘Date Chicken’ from Fukushima. Oyakodon (a bowl of rice with chicken and egg) served with skin charcoal-grilled chicken to add the flavor.
3. For Soborodon (a bowl of rice with seasoned mince chicken), selected all chicken parts are coarsely minced to give the texture.
4. Our Egg from Ibaraki is not generally on the market. With the deep orange yolks, the color of Oyakodon looks so beautiful.
5. To make citrus sauce, once a year, we go to Shizuoka to pick up bitter orange and peel each of them. All handmade. This has become our annual event for all staff, as the harvest takes place at the busy end of the year.
